One of the best values in the entire seafood industry is dry sea scallop chunks. These are byproducts of the hand-shucking process. After being shucked, they are graded by size: U/10’s, U/14’s, 10/20’s, and 20/30’s. Torn scallops and pieces of scallops are separated out and sold at an extreme discount.
