Fresh Virginia fluke is getting ready to make its return. Virginia’s commercial fluke fishery opens back up October 1, bringing another source of fresh East Coast fish into the market.
With more local supply available, we expect pricing to begin easing from the elevated levels we have seen while availability has been tight.
This is great news for chefs heading into the fall. Fluke is a versatile, mild fish that works well across a variety of preparations and can be an excellent option for a seasonal feature or seafood special as fresh landings begin to pick back up.
