A few times each week, Lee Beauchamp of Baywater Farms braves the cold and harvests his live bay scallops in the shell from Chincoteague Bay. These are truly unique, local, delicacies, and should be promoted as such. The shells are 2.5-3″ across, about the size of a top neck clam. Try a bag of 100 count this week – they are a bargain at only 65 cents per scallop.
