Chix and quarters this week finally reached single digits for the first time since last fall. Meanwhile, processors are increasingly turning their attention to lobster meat and tails, trying to feed a frozen market that’s hungry for product. Lobster tails are in particularly short supply.
Hopefully, in the next 30 days, the processors can stock up lots of product. By July 1, pretty much all the lobster seasons in Canada will be over. That’s when we’ll be shifting our gaze back to Maine. Known for its summer lobster runs, Maine consistently delivers a bounty of firm-shelled lobsters.
