Ingredients

1 dozen freshly shucked live oysters

2 shallots, should be thinly sliced

6 tbs red wine vinegar

1/ 2 tsp brown sugar

1/6 cup chives

2 ozĀ  Elite Reserve aviar

Directions

  1. Combine the shallots, vinegar, and brown sugar. Let marinate overnight or for a minimum of one hour in the fridge.
  2. Plate your oysters after shucking and dollop a small amount of caviar onto them. Sprinkle chives ontop as well. Serve with the mignonette sauce, and enjoy!
