Baked Salmon With Garlic & Dijon

Ingredients

  • 2 ea. 5 oz salmon portion
  • 2 tbsp fresh chopped parsley
  • 2 tbsp light olive oil plus extra for baking sheet
  • 2 tbsp lemon juice
  • 1 tbsp Dijon mustard
  • ½ tsp salt
  • 1/8 tsp black pepper
  • Half lemon, sliced into 4 rings
  • 3 garlic cloves, pressed

Directions

  1. Preheat oven to 450 F and line a rimmed baking sheet with foil, slightly oiled. Place the 4 salmon portions and arrange them on baking
    sheet.
  2. In a small bowl, combine lemon juice, mustard, salt & pepper.
  3. Generously spread the marinate over top the salmon and top each portion with a lemon ring.
  4. Bake at 450 for 12-15 minutes or until cooked through and flaky.
