Ingredients
2 ea. 5 oz salmon portion
2 tbsp fresh chopped parsley
2 tbsp light olive oil plus extra for baking sheet
2 tbsp lemon juice
1 tbsp Dijon mustard
½ tsp salt
1/8 tsp black pepper
Half lemon, sliced into 4 rings
3 garlic cloves, pressed
Directions
Preheat oven to 450 F and line a rimmed baking sheet with foil, slightly oiled. Place the 4 salmon portions and arrange them on baking
sheet.
In a small bowl, combine lemon juice, mustard, salt & pepper.
Generously spread the marinate over top the salmon and top each portion with a lemon ring.
Bake at 450 for 12-15 minutes or until cooked through and flaky.
