What if I told you there is a seafood item available year round and it is not only affordable, but also totally sustainable?  Too good to be true?  Not at all.  Ester Dockendorff’s family has been farming quality blue shell mussels since 1978 and to this day her family business, P.E.I. Mussel King, remains one of the great pioneers in the industry.  They use high tech equipment such as x-ray to ensure that each mussel contains a high ratio of meat to shell and tight grading systems that remove all broken shells.  The mussels are farmed in the clean, cold waters of Prince Edward Island at low densities and are harvested as orders come in, delivering on a promise of freshness that has stood since the first bag was shipped in 1980.  Prince Edward Island mussels have become an industry standard for quality due to their uniform size, crisp flavor, and clean shell.  It’s also nice being able to gorge on a sustainable resource that is heart healthy and packed full of omegas, vitamins and minerals.
